Okay, friend. So we are going to chat about some really simple recipes that you can do if maybe your life is in chaos right now. That could be the loss of someone or it could just be like Megan was talking about earlier. You have young children and you're just like, Oh, what do I do now? So we'll get started.

And Megan, do you want to share one of your recipes first that you came up with? That was simple.

Well, yes, I invented this recipe. It's called spaghetti. You know, one of my go to meals to make is spaghetti. And the reason I do it so much one, my son likes it like he'll eat it and all it is is pasta and sauce. You can add meat to the sauce if you want. You don't have to. You can add meatballs.

You don't have to. You can make it healthier by doing spaghetti squash instead of noodles. Or if you're like gluten free or something, you know, you can make those variations as needed for whatever you need, but you're still getting the same dish. It is a go to easy meal that we make. And I know that that's not like some revolutionary idea, but sometimes something has to kind of hit you in the face and be like, Oh, right.

I could just like, do spaghetti and that's fine, you know, because what matters is you're getting fed. Like if you are in a hard season, say, you know, your partner or somebody has died or you have young children or you're just like going through it or whatever it is, something hard. Spaghetti is so easy to make and, you know, Yeah, and it has nutritional value.

You know what? I really like Ringo's sauce. It is bougie and expensive. And Christina turned me on to it. But it's like one way that I feel better about just serving spaghetti with just sauce. But this is so good. Honestly, it's all natural, but it's like, no sugar added into it, I think. And it's got.

A lot of vegetables. Accounts is like if you're looking at counting like how many vegetables you've had, it definitely has some some good. Yeah. Counts in there. Yeah.

That is one of the that I just pasta and sauce done easy and it's cheap and like I said it can be you can change you can add meat or not or you can make it gluten free or healthier with squash or not. Yes. And and going off of what you said, it's the nice thing is those are dry like those are nonperishable. So you can just have those as like and just.

My recipe is very like jumping off of like, the Reyes marinara sauce is amazing. You can find it at Costco if you're a member there. There's a double pack there a lot of times, and they'll have it on sale. It is excellent and so many different things. But a zucchini bake is what I love to use it in.

And so I do zucchini and I just cube that zucchini up and you can take the seeds out if you want, but I just keep it up. I like very simple recipes. So we're going to keep up the zucchini. We're going to throw it into a nine by 11. You're going to pour the Rayo marinara sauce over that, do some grated cheese, and then mix in a protein that you like.

You know, do you like ground chicken? Ground turkey or whatever protein? And then you're going to bake that on 400 for 35 minutes? Oh, my gosh. My son, who is 25, loves this. My nephews, who are teenagers, love this. Their little sister loves this. This is a hit. And it's very, very simple. And you've got your protein in there and you've got vegetables.

Yeah. And that's what I'm all about. I don't want to spend a lot of time cooking. I don't enjoy doing it, and I specifically don't enjoy doing it when I'm already having a hard time in life. I don't want to be standing around the kitchen. So a recipe that number one gets me and my family fed. That's the first and foremost.

Number two, if it can provide some kind of nutrition, awesome. Like vegetables and a protein like. Yeah, fantastic. Yes. And it's easy. Also like sign. Yeah, for sure.

Yeah. So another one that I did because after my husband died, my son was in college not long after that. And learning how to feed yourself when it's just you versus, you know, you had a child in the home and a spouse in the home. It can be very challenging. And one thing that I found helpful was to pre cook my protein.

So if it was ground chicken or ground turkey, you can put that in the freezer and pull that out as needed. But one thing I did is that I would use sweet potatoes. I would cook sweet potatoes, and I would do two or three sweet potatoes at a time. And then for dinner I would do or lunch, I do a sweet potato and a protein.

I found that very helpful. And I love Alton Brown's recipe for doing potatoes is just that you, you know, wash them, you know, poke some holes in them, coat it with olive oil, do some salt, and then you bake it on the rack at 350 for an hour and a half. And like friends are perfect. So that was one thing that I found helpful for me as somebody who didn't have little kids around to feed, was learning that you can take your protein and you can put it in the freezer, portion it out and put it in the freezer and just as you need it, pull it out.

Yeah, Yeah, that is helpful. Just knowing you can cook it and then freeze it in like individual portions. So then you're just pulling out what you're going to eat. Also, it's already cooked and you just have to eat it up. Yeah, I think so. Well, you talked about the opposite going from cooking for a family to only cooking for yourself.

I have to find recipes that my son's going to like too, and he's not, you know, a crazy picky eater or anything. But I do still make an effort to find things and have him try new things. And, you know, we're not always eating the same stuff. And anyway, so we have this dish that we like and we call it Monster MASH.

And the only reason we call it that is because we ate it on Halloween once. And it's kind of like a mash of a bunch of stuff. So we call it Monster MASH, but this is a recipe I pulled off of some cooking blog I don't remember and then kind of made it my own, but in a crockpot, you add like a couple pounds of chicken and then you mix together a can of cream of chicken soup and the small container of sour cream.

Mix that up and then you mix a box of stuffing, mix with like a cup of chicken broth, and you put the cream of chicken soup mixture on top of the chicken, and then you put the stuffing on top of that. And then I always add a vegetable, add some peas or some like frozen green beans or like something like that, and just let it cook, let I cook the standard times, you know, 4 hours, a low six, 8 hours on high, or I set that backwards 4 hours and high six, 8 hours.

I know. And it's just like once once you take it out, like you mash it all kind of together, when once it's done cooking and it's this like goopy, delicious, like mash, and we call it Monster mash. My son loves it. It is so easy and it's something you could totally make ahead of time. And put it in like a giant Ziploc bag and just mix it all together, put it in the freezer, and then just bring it out and just dump it in the crock pot.

That's a really easy one. And it's like kind of comfort food. It's like almost homestyle. It's not particularly healthy, which is why I try to add, know, frozen vegetables in. But that's something that he requests this actually like weekly. And when you can prepare a meal in a Ziploc bag and just pull it out and put it in the crock pot lifesaver, especially when you're just don't feel like cooking, you know, it doesn't even have to be that you're going through something hard.

We'll do bacon and eggs. And I always make my bacon in the oven. That's my life. Hack with bacon, because then it's not splashing on you on the stove. And it's easy. You do 400 for like, 20 minutes and then flip it over and see. It depends on if you have a thick cut or a thin cut bacon, the amount of time it has to cook, but it's like 400 degrees and then 10 minutes on each side, or it might be 20 minutes on each side if you have to cut bacon, but it makes it a lot easier.

Oh, and line your sheet pan with foil so that it's easier to clean up. Mm. Yeah, we'll do that a lot because it's so easy and it's a lot of protein. So to keep you full.

I have one that I use a lot and it's funny, my son woke up this morning and I had made cookies for something and he woke up and he walked out and I was like, there's cookies in the kitchen for you. And he was so disappointed. He's like, Oh, he's like, I thought you were making biscuits and gravy.

And so he thought he was making it to biscuits and gravy. So I want to share this really quick recipe that I got from my sister, and it's on the Internet. I think this is a pretty common recipe, but I had never heard of it before. So this is my go to it is four cups of Bisquick, one cup of 7UP and one cup of sour cream.

Now I use Greek yogurt, plain Greek yogurt in it, and I think it's so much better, but it's just literally those ingredients and you mix them together. You don't want to over mix them, mix those three ingredients together in an a baking dish, you're going to melt some butter like makeover butter and Malta and put it in the bottom of the baking dish and then scoop the mixture out.

Oh, my goodness. Friends, for an hour and 25 degrees for 20 minutes. These are the most perfect biscuits. I pretty much keep like a case of 7UP in my home and this quick just for this purpose. So then all I have to do is grab the Greek yogurt or sour cream, whatever you prefer. And that's it. And so on a Saturday morning I can do those.

We made them for Thanksgiving one year and I was like, Oh my gosh, this is so simple. It is so simple and it is so much better than a canned biscuit that it's just like, Yeah, you just try it.

If you have like a chronic illness or a mental illness or you just plain don't want to spend all your time in the kitchen, this is this is for you.

So now we want to talk about tips for fueling, because a lot of times if you are in the midst of, you know, a loss or you're just really struggling, maybe their mental health is you've got a struggle going on there and you need to fuel your body.

It's important. I remember right after Michael died and I think you've mentioned this before, too, like you don't want to eat your body. Just you just can't eat. You cannot eat. And I have gone about three days, I want to say, without eating. And there was a moment that my body just I just looked at my mom and my my daughter and it was like, something's wrong.

Something's very, very wrong. And it was just like at that point, my body was just like, You have gone so many days without eating. But yeah, so I really want to encourage you if you can, when you're ready, and maybe you don't have an appetite, but if you can keep these things on hand and then plus, if you are somebody listening and you are supporting someone who's grieving, these might be a few things for you to consider for them.

Just keep it simple. But if you can just a little bit of stuff in your system because your you are processing a lot of hard things and give your brain it needs fuel. And so if you can help it out, if you can help your body out in supporting you during the season, it's going to help you a lot.

Yeah, I think that those like you said, if you're supporting somebody who is grieving, showing up with some of those snacks for them to keep in their fridge or pantry would be a really cool thing to do.

So for this month, for about Cup Club, we are reading a book by Casey Davis, and her book is How to Keep Housebound Drowning. And in her book, Casey says, if feeding yourself is very hard, turn your attention to kids food. I love this you guys so much. Toddler food is designed to shotgun the maximum amount of nutrition into someone with a limited palate and even more limited attention span.

So I loved this. Her idea, she suggested, was yogurt uncrustables microwaved mac and cheese and she said to throw in a multi vitamin. So I loved that. Just that idea of like grab some Lunchables, anything like that that you can eat if you have no appetite. We're not here to worry about calories. We're not here to worry about sodium unless there's an issue.

Yeah. Another thing I mentioned earlier, food prep. And so that was one thing that my friend Candy shared with me. I did not know that you could freeze if you made chicken or something like that, that you could freeze those other things. So if you're used to making larger portions for a family, you can throw those into your freezer and then just pull individuals out later because that is part of something that you have to grieve, is that you're used to cooking for several people.

You know, you're used to maybe in my case, where my son had gone to college after my husband passed and then my husband was gone, I'm like, I don't know how to cook for one person. And so just know you can freeze that stuff. You can individually portion it and then it's there for later. And I didn't that was something that I had to learn just a tip for.

And if you are supporting someone who has lost someone, you know, go over and do their food prep for them could be a very nice gift for them. Instead of bringing over stuff, make sure that it's in individual containers, like if you're bringing over, you know, apples or something, maybe you go in and you cut them up or you do things like that.

This is kind of not related to that, but I wanted to talk about this app that I found my friend Abby introduced me to. It's called Copy Me That. And it's an app where you can copy recipes off of recipe blogs and stuff and then has them all in one app so you can make changes and edits to it also.

So it's like that monster mash recipe that I talked about before. I have it in my copy me that app because I found it on the internet and then I changed it to make it work better for us. And now I have it saved there so I don't have to remember what blog it's from. I didn't have to print it out and put it in a recipe book or anything.

It's just in this app. So it's called Copy Me That and it's free and it's just a helpful way to remember some of those recipes that you find. What's important during a hard season is feeding yourself, fueling your body, making sure that you are eating. So this is not the time. Like Christina said before, to be counting calories, to be worried about your body, to be worried about anything outside of the fact that you have to eat to survive.

Food is fuel, and that's all food, not just the stuff that's quote unquote, healthy. It's eating anything. So that's what's important during this time.

I agree. Yes. And just remember, your brain needs that to function. So it needs that glucose. And so if it's being starved from that, your brain is not going to be able to process things properly. So if you can just remember that, that it's like if you have to force feed yourself a banana or string cheese or something like that, you would do that for a friend, You would want that for a friend.

And so care for yourself like you would dearly love a friend or a small child in this situation. And take care of yourself friends, because we know the season can be really hard when you're going through stuff and we have been there. We know what that's like to have no appetite and have things be, you know, out of your control.

So we really want to encourage you focus on protein. If you are like, I can't eat anything, maybe grab some nuts or string cheese or something like that and and keep your meal simple. During this time, they say that we only eat the same nine meals, but figure out like five things that you can eat repeatedly through the season so that you.
